Deleted User Auto-Replu
When a user leaves a company, we delete the account and move the data to one of the other users. We would like to be able to put some sort of auto-reply that if an email comes in for that removed account and auto-reply goes out letting the sender know that they are no longer there. Something that we could do, that would not take up a mailbox, like using an 'Alias' and have an auto-reply text box that would be filled in.

Perhaps not as automatic as you might like, just recreate the user account after the delete. Create mail rules to auto-reply and to discard all incoming messages.
I also enter a "delete by" date in the account description for reference.
